Our year living in China held so many
new experiences for us but among them our taste buds were challenged with new
spices and ingredients daily. Over the New Year holiday a local fellowship came
by to teach us how to make dumplings with them. Many of our students were
vegetarians and so naturally we made a vegetarian dumpling filled with egg and
an onion like (for the life of me I wish I knew the specific name) and then
another filled with finely chopped pork and veggies. They were delicious and
the process of making them surrounded by dear friends made the day so special.
I will never forget the way
that the air hung heavy with the smell of burning incense and the constant
interruption of fireworks throughout the day. Dumplings are about bringing
family and friends together to create something equally beautiful and
delicious. I wish I had the exact recipe but for now here are some pictures to
share from our time together.
"For
behold, darkness shall cover the earth, and thick darkness the peoples; but He
will arise upon you and His glory will be seen upon you. And nations shall come
to your light and kings to the brightness of your rising". Isaiah 60:2
